My love for Beetroot continues with these vibrant and delicious Beetroot Falafel .
They came into existence because I had some roasted Beetroot and soaked Chickpeas lying in the refrigerator. A few more simple ingredients were mixed together with the Chickpeas and Beets to make these incredibly healthy yummy bites.

Usually I find that many people are averse to using Beetroot in their cooking. Many a times when I’ve shared a recipe using Beetroot on Instagram, I’ve received comments that this may not taste good. If you are one of those who do not like the taste of Beetroot, I would urge you to give this recipe a try. When cooked the right way, Beetroot tastes extremely delicious. Many of my friends and family who have eaten at our place have fallen in love with this very nutritious vegetable.

My Beetroot Falafel are a very colorful twist from the usual Falafel. They not only look delightful, infact taste addictively delicious too. The Beetroot adds a slight sweetness to these Falafel giving them a very unique flavor.

My colorful twist to the classic Falafel recipe made using Beetroot. Nutritious, delicious and a must try.

Ingredients
  

  • 1 Cup Raw Chickpeas
  • 1/4 Cup Parsley
  • 1/4 Cup Coriander
  • 1 Onion roughly chopped
  • 8-10 Garlic Cloves
  • 1 Beetroot roughly chopped
  • 1 tsp Cumin powder
  • 1 tsp Coriander powder
  • 1 tsp Chilli flakes
  • Salt to taste
  • 3 tbsp Sesame Seeds
  • 2 Cups Vegetable Oil

Instructions
 

  • Soak chickpeas in water overnight.
  • Add all ingredients to a food processor and pulse to a coarse mixture. 
  • Refrigerate for a few hours.
  • Roll into small balls
  • Coat with seasme seeds 
  • Heat oil in a skillet
  • Fry the Falafel on medium heat until crisp.
  • Serve Hot. Enjoy.
